Frittelle di Cavolfiore (Cauliflower Fritters)
Frittelle di cavolo are delicious cabbage-and-cheese fritters from Maremma in Tuscany that make an easy and hearty appetizer or snack. In this recipe, you will learn how to create them using an easy batter that you fry until golden-brown for crispy perfection – enjoy them hot or cold seasoned with salt and pepper. This is an excellent way to use up leftover cabbage while enjoying traditional Italian countryside cuisine!
Ingredients:
- Half medium cauliflower
- 2 tbsp chickpea flower
- 2 eggs
- 1 tbs mustard (optional)
- 2 tbs grated parmesan
- vegetable oil for frying
- salt & pepper
- Parsley
Preparation:
- Clean the cauliflower, cut it into florets and boil it until tender.
- Drain it, put it in a bowl and mash it with a fork.
- Add the cheese, mustard, salt, beaten eggs, parsley and finally the flour.
- Mix well and let it rest for 5 minutes.
- Meantime, heat the oil and fry the fritters by spoonfuls: brown them on both sides.
- Drain on kitchen paper and serve the fragrant cauliflower fritters.
NOTE: You can also cook them in air fryer after spraying them with olive oil.
